Marinated salmon is the perfect Friday tea – easy and full of flavour. This recipe is inspired by tandoori fish – but I smother it in yogurt and bake it, for moistness and convenience. If you forget about it in the oven it will forgive you.
Do you eat fish on Fridays? My family aren’t Catholics and we don’t keep fast days, but I still like the tradition of eating fish on a Friday, and on Christmas Eve. In part, it’s just a reminder to eat fish. I never liked it growing up, but I taught myself to as a student – it’s just so easy and nutritious. Not too expensive either, in the grand scheme of things.
And why marinated salmon? Marinades are just so easy to make, and add so much flavour. No stirring a saucepan constantly, no chopping or elaborate steps to lock in that flavour. Just mix a few ingredients together and leave.
How to Marinade Salmon
It really couldn’t be easier. You will still gain some flavour from just half an hour marinading, but the most convenient way of doing it for me is to do it the night before, or that morning before I go out for the day. In fact, if you don’t marinade it but just stick it in the oven it will still taste lovely.
Pick a dish that isn’t much bigger than the fish, coat in the marinade and return to the fridge. You can even do it while the fish is still frozen, it will continue to defrost. In the pictures here, the fish was still frozen while I spread the spiced yogurt over it.
Marinated Salmon Recipe Tips
If you have the time to let the salmon come to room temperature and preheat the oven, perhaps while it’s marinading, it would no doubt cook quicker. This recipe was inspired by tandoori marinades so we served it with a kachumber salad, raita and naan bread. If you’d prefer to serve it with mashed potato or chips, that’s just fine.
The spiced yogurt marinade keeps the salmon moist in the oven and gives a lovely flavour- without much work.
- 1/2 cup natural yogurt approx 8 tbsp
- 2 tsp mild curry powder use your favourite
- 2 salmon fillets
Mix the yogurt and spices together.
Place the fish in an oven proof dish, and cover in the spiced yogurt.
Unless you're cooking immediately, leave in the fridge to marinade
Cook on gas mark 6 until the salmon is done. This took us around 25-30 minutes, but all salmon is different.
