This was wooden-spoon-lickingly good, and ready in no time at all.  Don’t get fresh herbs specially – and tinned mushrooms or frozen peas or peppers would also make a good meal. Use whatever cheese you have.

Every so often, a celebrity chef claims that fresh food is much better.  I can’t deny that fresh vegetables often have the upper hand for flavour, but it depends what the alternative is.  When I’m short of time or space it’s between frozen and tinned veg, and pre-prepared rubbish out of the freezer.  So, here’s this week’s low-effort, high-flavour weekend lunch. Add a salad and it could be dinner.

Ingredients

  • 6oz fusilli pasta
  • 2-3 handfuls frozen mushrooms
  • 1 tin chopped tomatoes
  • garlic granules to taste
  • A sprinkling of black pepper
  • 3 thick slices mature cheddar
  • a sprig of fresh oregano from the garden

Instructions

  1. Boil the pasta until it's tender.
  2. Drain it thoroughly and add the mushrooms, tinned tomatoes, garlic and black pepper.
  3. Give it a good stir, and leave it to simmer while you set the table.
  4. Cut your cheese into chunks and stir it in, along with the oregano. When the cheese is melted, serve up.
